🍫 Classic Australian Lamingtons Recipe

🍫🇦 Sweet, simple and straight from the Aussie kitchen...

Ever tried homemade Lamingtons?

Soft vanilla sponge, dipped in chocolate and rolled in coconut — it’s nostalgic, comforting, and always a hit with neighbours, guests or afternoon tea.

Lamingtons are more than dessert. They’re school bake sale staples, Sunday memories, and a little hug on a plate.

✨ This weekend, we’re baking a batch and sharing the joy.

🍫 For the sponge cake:

125g (1/2 cup) unsalted butter, softened
150g (3/4 cup) caster sugar
2 eggs
1 tsp vanilla extract
180g (1 1/4 cups) all-purpose flour, sifted
1 ½ tsp baking powder
120ml (1/2 cup) whole milk

Instructions:

Cream butter and sugar until light and fluffy.
Add eggs one at a time, then vanilla.
Gently mix in the flour and baking powder, alternating with milk.
Pour into a greased 20x20cm (8x8 inch) square pan.
Bake at 180°C (350°F) for 25–30 minutes or until golden and springy.
Let cool completely, then cut into squares.

🍫 For the chocolate icing:

250g (2 cups) icing sugar
30g (1/4 cup) unsweetened cocoa powder
80ml (1/3 cup) milk
30g (2 tbsp) butter

Instructions:

In a saucepan over low heat, stir all ingredients until smooth.
Keep warm while dipping.

🥥 To finish:

About 200g (2 cups) desiccated coconut

How to assemble:

Dip each sponge square into the chocolate icing using a fork.
Immediately roll in coconut until fully coated.
Let set on a wire rack or parchment paper.
